That is about 43 percent of the egg's protein sitting in the part people throw away to get more protein.
The myth survives because the white is the purer protein: strip the yolk and you are left with water, protein, and very little else. But purity is not quantity. Removing the yolk removes almost half the egg's protein along with all of its fat, so a single white is a smaller protein serving than a single egg, not a bigger one.
Per 100 grams the two look far closer than most people expect: 12.6 grams of protein in whole egg against 10.9 grams in egg white. Raw white is close to 88 percent water, so its protein is diluted by weight even though it is undiluted by calories. Egg yolks and cholesterol: the myth and current guidance

That cap is gone. The Dietary Guidelines for Americans dropped the specific numeric limit from the 2015 edition onward, and the current 2020 to 2025 edition advises keeping dietary cholesterol as low as possible within a healthy eating pattern without naming a number. The reasoning is that for most people, saturated and trans fats raise blood LDL cholesterol far more than cholesterol eaten in food does, because the body adjusts its own production in response to intake.
The American Heart Association's 2019 science advisory on dietary cholesterol reached a similar conclusion: no specific numeric limit, with the emphasis placed on the overall eating pattern instead, and eggs able to fit inside a heart-healthy diet. That is a genuine relaxation of old advice rather than a licence to ignore the topic.
Two honest qualifications. First, response varies: a minority of people are described as hyper-responders, whose blood cholesterol moves more with dietary intake than average. It is a small, acute study measuring hours rather than months, and the mechanism was not established, so treat it as a reason to stop fearing yolks rather than proof that yolks build more muscle.
What dominates, as usual, is total daily protein. Gains from added protein in trained people plateau in the region of 1.6 grams per kilogram of body weight per day, and once you are eating at that level the source stops mattering much. Taste, cooking, and cost
